Nathan McCarley-O'Neill began his career at the prestigious Merchant Hotel in Belfast, Northern Ireland, while it held its greatest accolade of ‘World’s Best Bar (2012). After relocating to London to join the team at Milk and Honey; Nathan continued his career as the opening bar manager of Dandelyan at the Mondrian Hotel (World's Best New International Cocktail Bar (2015), World's Best Cocktail Menu (2016) World's Best Cocktail Bar (2017) and Best International Hotel Bar (2017) at TOTC Spirited Awards, Awarded #3 at World's 50 Best Bars (2016), Winner of Best Bar Team in London (2016) at the Time Out Bar Awards). Alongside being named “World’s most experimental bartender” at the Glenfiddich (2016) global competition and “Bartender of the Year” at Heaven Hill’s (2017) National Bartender finals. Under Nathan’s leadership as NoMad Bar Manager, NoMad retained it title as the number one bar in North America (2018). He was then promoted to East Coast Bar Director in January of 2019, overseeing the bar programs at the NoMad in NY and Eleven Madison Park. Nathan is currently employed by the Sydell Group as the Bar Director for all of the NoMad Hotels.
