A native of New Jersey, Mike began cooking at age 15. His summer job for several years was working at a small, high-volume seafood restaurant. With thoughts of one day owning his own restaurant, he studied business management at St. Bonaventure University. After graduating, he promptly went to the CIA to further his culinary training. While in school Mike spent time in the kitchens of DB Bistro and Bernard’s Inn in New Jersey. Following his graduation in 2010, he worked at farm-to-table-focused Ninety Acres in Peapack, NJ. When NoMad opened in 2012, Mike was hired as part of the opening team. Mike was promoted to Chef de Cuisine in 2016.
