A native of Boulder, Colorado, Brian Lockwood began his career as a dishwasher and worked his way up to a 3-year apprenticeship program through the American Culinary Federation. When he was 22 years old, Brian relocated to San Francisco to study under the California cuisine pioneer, Gary Danko, in his Michelin star kitchen. Following his time in San Francisco, he worked under Chef Thomas Keller at The French Laundry in Yountville as Chef de Partie for two years. In 2010 he moved back home to Colorado as the Chef de Cuisine at the celebrated Frasca Food and Wine before taking time to travel throughout Europe, with stints in the kitchens of two and three-star Michelin restaurants including the acclaimed El Celler De Can Roca. In 2012 he became the Sous Chef of Eleven Madison Park and then as the Chef de Cuisine at NoMad New York. He returned exclusively to Eleven Madison Park 2016 and in the fall of 2018 was promoted to Chef de Cuisine.
