Executive Pastry Chef Tracy Wilk leads the pastry and dessert programs for Craveable Hosptlaity Group's David Burke Kitchen and Aspen Kitchen. Backed by an ambitious kitchen team, which Wilk guides with a mentor mentality, the chef brings a lighthearted attitude to the restaurant and focuses on delivering an undeniable “wow” factor.
Wilk grew up in Miami, FL, where her love of baking sparked at a young age and never waned—instead of sneaking out with friends on the weekends, she encouraged them to bake with her in the kitchen. During high school, that passion for cooking intensified—most of her close friends and relatives received homemade cookies for Christmas instead of traditional gifts.
As adulthood approached, Wilk expressed a strong desire to attend culinary school, but her parents encouraged her to receive a university degree. Wilk attended the University of Central Florida and graduated with a degree in political science. As soon as she graduated, however, she resumed her baking dreams and enrolled at the National Gourmet Institute in New York City—ironically, a leader in health-focused cuisine, which Wilk translated into dessert innovation.
Wilk completed her externship at New York’s famed ABC Kitchen, and spent two years under the leadership of Chef Dan Kluger. During February 2013, Wilk signed on as pastry cook for SoHo’s David Burke Kitchen, and has rapidly ascended to her current role of executive pastry chef. She oversees the pastry operations not only for the restaurant, but also for JIMMY Rooftop Bar and The James Hotel, in which the former are located. In 2017, Wilk took her talent to Aspen, Colorado to open Craveable Hospitality’s Group’s latest project, Aspen Kitchen.
