Executive Pastry Chef Colleen Grapes creates sumptuous, seasonal desserts with a special emphasis on gluten­ free options, which often include her signature elements of pistachios and strawberries.Chef Colleen graduated from Johnson & Wales University, where she received her Bachelors of Science in Food Service Management, an Associate’s degree in Baking and Pastry Arts, as well as her Cordon Bleu; and attended Valrhona School of Chocolate in Tain l’Hermitage Cedex, France. A native of New Jersey, Chef Colleen has worked in several notable restaurants throughout New York City including The Red Cat, The Harrison, Irving Mill, Ono, and The Dressler.She has appeared on Food Network’s “Sweet Genius” and “Alex’s Day Off;” Cooking Channel’s “Unique Sweets” and “Chefography;” and CBS New York’s “The Couch.” She has also contributed to several cookbooks including Alan Battman’s Pies, Street Eats, and Small Things Sweet; and the forthcoming cookbook from Men Who Dine.
