Baltimore-born Damon Wise spent his childhood summers steeping in the rich traditions belonging to the shores of the Chesapeake Bay – Old Bay-fueled crab boils, garden fresh produce and gathering family for a big meal cooked with care.
It was the kindling for a culinary career that would later take him around the world landing in New York where he would come to share the kitchen with Chef Andrew Carmellini at Lafayette, his French grand café and bakery in NoHo.
En route, Wise has made his way through luxe and lauded destinations like West Virginia’s historic resort, The Greenbrier, and Gray Kunz’s Lespinasse in New York City; infamy’s Le Bec Fin in Philadelphia under Georges Perrier and Laurent Tourondel’s Cello on Manhattan’s Upper East Side; and living legends like Gramercy Tavern and Taillevent and Apicius in Paris, France.
Before joining Carmellini for the opening of Lafayette, Wise was the Executive Chef of Tom Colicchio’s three-star Gramercy flagship, Craft, as well as the entire collection of restaurants bearing that name.
